Making drinks from momordica cochinchinensis and passion fruit

Abstract
Flesh of Momordica Cochinchinensis/gac with passion fruit as raw material for making commercial drinks will help increase the value of these fruits and develop new products. The obtained products of 15% blended passon, 10% gac, sugar 180Bx taste good with pleasant color and flavor. With pasteurization at higher temperature and longer time, the well-cooked smell, and higher loss of vitamin C are found on the products. Therefore, pasteurization temperature should be 850C for 6 minutes, pasteurized value P=9.88 to make good products of safety and hygiene.
